Chicken Rice with lots of Veggies

We all know that chicken (white meat) is rich in proteins and very nutritious for growing kids. If prepared well children would love to eat our chicken rice. And Mom’s will be happy to serve this dish too as we are going to add a lot of vegetables which many kids avoid.

So here are the ingredients for this delicious chicken rice with veggies.

·         We would need Boneless chicken ½ a kilo cut into small pieces

·         Basmati rice soaked 1 ½ cup

·         Red chilli powder (depending on how much spice you want)

·         Ginger Paste – 2 tablespoons

·         Garlic Paste – 2 tablespoons

·         Oil

·         Cumin seeds 1 teaspoon

·         Cloves 4-5

·         Green Cardamoms 4-5

·         Cinnamon 1 stick

·         Onions Sliced – 2 medium

·         Tomatoes chopped – 3 medium

·         Yogurt ½ cup

·         Chicken stock (if available)

 

Method of Preparation

Marinate chicken pieces in a bowl. You will need chili powder, salt, ginger- garlic paste and mix this well with the chicken pieces. Refrigerate for 15-20 mins.

Meanwhile heat oil in a pan, add cumin seeds, cloves, green cardamoms, bay leaves and cinnamon. Let them roast for few minutes. Add onions to these spices and sauté till light brown. Now add ginger – garlic paste and red chilli  powder (optional) Stir well.

Add tomatoes, salt, yogurt and continue to sauté for few minutes.

Now add rice and marinated chicken pieces along with the coriander leaves for flavor. Add chicken stock (or vegetable stock/water) and bring it to boil. Cover the lid and cook on a medium flame. Cook till rice and chicken are cooked well. Garnish with chopped coriander leaves. Serve hot.
